Bourbon Cask Matured Whisky: A Guide to Bourbon Casks

When you think of whisky maturation, you might immediately think of sherry casks, wine casks or even port. But one of the most important cask types in Scotch whisky is the bourbon cask.

Used by distilleries across Scotland, bourbon casks are responsible for some of the most recognisable flavours found in Scotch whisky — from sweet vanilla and caramel to honey, coconut and gentle spice.

But why are bourbon casks so popular, and what exactly do they bring to a whisky?

What Is a Bourbon Cask?

Bourbon casks are oak barrels that have previously been used to mature bourbon whiskey in the United States.

Under US regulations, bourbon must be matured in new, charred oak containers. Once the bourbon has been bottled, these casks can no longer be used to mature bourbon as new oak, so many are shipped overseas and reused by producers of Scotch whisky.

This has made bourbon casks an incredibly important part of the Scotch whisky industry.

Why Are Bourbon Casks Used for Scotch Whisky?

The beauty of a bourbon cask is that it has already been used once.

During the production of bourbon, the new oak is charred on the inside before the spirit is filled into the barrel. This process helps to break down compounds within the wood, allowing flavours and aromas to develop.

When a Scotch whisky is later matured in the same cask, it can extract some of these compounds from the oak, while also taking on characteristics left behind by the bourbon.

The result is a whisky with a completely different character from one matured in a sherry cask, for example.

What Flavours Do Bourbon Casks Add?

Bourbon cask matured whisky is often associated with sweet, creamy and approachable flavours.

You may find notes such as:

  • Vanilla
  • Caramel
  • Honey
  • Coconut
  • Toffee
  • Butterscotch
  • Fresh oak
  • Gentle spice
  • Stone and tropical fruits

Of course, the final flavour depends on much more than the cask. The distillery, spirit character, maturation length and type of bourbon cask all play a part.

First-Fill vs Refill Bourbon Casks

Not all bourbon casks have the same influence on a whisky.

A first-fill bourbon cask is a cask being used for Scotch whisky for the first time after previously maturing bourbon. Because the oak still has plenty of influence to give, these casks can impart more noticeable flavours to the spirit.

Refill bourbon casks have already been used to mature Scotch whisky. As a result, their influence is generally more subtle, allowing the character of the distillery's spirit to take centre stage.

Neither is necessarily better — it simply depends on the style of whisky the distillery is looking to create.

Bourbon Casks & Single Malt Scotch

Bourbon casks are particularly common in single malt Scotch whisky and are used by distilleries across Scotland.

They can be used for the entire maturation period or alongside other cask types to create a particular flavour profile.

Some whiskies are matured entirely in bourbon casks, while others may spend time in bourbon casks before being transferred into another type of cask for a finishing period.

This gives distillers plenty of ways to influence the final whisky.

Is Bourbon Cask Whisky Sweeter?

Often, yes — but it's worth remembering that "sweet" doesn't necessarily mean sugary.

The vanilla, caramel, honey and creamy notes associated with bourbon cask maturation can give a whisky the impression of sweetness, even though whisky itself contains no added sugar.

This makes bourbon cask matured whiskies particularly popular with people who enjoy smooth, fruity and approachable drams.

They're also a great choice for anyone beginning to explore Scotch whisky.

Bourbon Cask vs Sherry Cask

One of the easiest ways to understand the influence of bourbon casks is to compare them with sherry casks.

Bourbon casks tend to bring flavours such as vanilla, honey, caramel, coconut and fresh fruit.

Sherry casks are often associated with richer flavours such as dried fruit, dark chocolate, nuts, spices and richer sweetness.

Neither style is better — they simply offer a different experience.

And, of course, many whiskies use a combination of cask types to create more complex flavour profiles.
