Philip and Simon Thompson announced their plans for the Dornoch distillery back in 2015, with a successful crowd-funding campaign 2016 leading to the establishment of the distillery on-site at Dornoch Castle Hotel; one of the World’s leading whisky bars in Dornoch owned by the Thompson brothers.

Housed in the Old Fire Station on the grounds of Dornoch Castle Hotel, the brothers are focussed on making a style of whisky that has been long extinct, using floor malted organic heritage barley varieties to make it, and utilising long fermentations with brewers varieties of yeast in their wooden washback

    A Top Rum For Sure

    In my opinion one of the bargain rums from last year, and I had to get another bottle from Still Spirit as it was so well priced. Although only 10 years of age, it shows maturity beyond its years due to the perfect ex-madeira cask maturation, that imparts so much flavour and character to the dram.

    On the nose it is sweeet, rich, spicy, strawberry, earth, dried fruits and an unusual "meaty" element which gives this a tad bit of funk. Alcohol is so well integrated. On the palate medium body texture, sweet apricots, raspberry tartness, spicy wood tannins and a big dollop of vanilla that really makes itself known in the sweet finish, and lingers along nicely with a little spiciness from the barrel. As already said, just perfect ex-madeira cask maturation.

    As far as complexity goes, sure this isn't the most complex rum I have tasted, however it more than makes up for it by being so drinkable and a bargain at its price point. It was my 5th favourite rum from last year, and tasting this again in 2024 I cannot think of any other rum as good at this price point. Thanks to Still Spirit for giving me a chance to get this again this year as a reminder of how good this rum is.
